Peanut Sesame Noodles
On the nights when you’re rushed and tired, ordering out can seem like such an easy option. However, may of these take-out offerings can be high in fat and calories, so what happens when these calories, not to mention the extra costs of take-out, add up? So that you don’t have to find out and bust both your budget and diet, here is an easy and quick recipe that you can have ready even before the delivery man arrives.
This recipe for Peanut-Sesame Noodles is great when freshly made, but is equally as tasty taken the next day for lunch. Soba noodles are made from buckwheat flour and contain 5 grams of protein and 3 grams of fiber per 2 ounce serving.
If you can’t find these in your local supermarket, whole wheat linguine can be substituted. As for the peanut butter, the more all-natural the better. In the Whole Foods near me, there are even peanut butter grinding machines in the store so you can have peanut butter made right that instant – you can even switch the button to make it yourself! Try this dish on a night when speed is your need, and you’ll be able to delete all of those take-out restaurants off of your speed dial once and for all.
Peanut-Sesame Noodles
Ingredients
1 8-ounce packages soba noodles
1 cup snow peas, washed and trimmed
3 tablespoons lite soy sauce (low sodium)
2 tablespoons toasted sesame oil
2 tablespoon all natural chunky or smooth peanut butter (those with peanut allergies may substitute almond butter)
½ medium cucumber, cut into half-moon slices
Method
Cook the soba noodles according to the package directions. Meanwhile, steam the snow peas until bright green and crisp-tender, about two minutes. Drain and rinse the noodles and transfer to a large bowl and add the cooked snow peas. In a small bowl mix together the soy sauce, sesame oil, and peanut butter with a fork. Pour over the noodles and toss together – if mixture is too dry, add a little bit more soy sauce or sesame oil until noodles are evenly coated. Serve with the cucumber slices.
Serves 4.
